Macintosh OS X Language Support

I am an interpreter. I need use English, Polish and Russian. It's easy in PC but is it a way to sort it for Mac?

Go to System Prefrences > International

and put whichever you want to use first on the list.

EDIT: There are more languages than what's on the list. Click the "Edit List" button to add more langauges that are already installed.
 
Thank you. What to do with the llayout of kkeyboard? I have one for PC with both Latin (black letters) and Cirrilic(red letters). Is something like that available for Mac.
I've bought on ebay Mac Office 2000 but Entourage and Messenger do not want to co-operate...
