I have a G5 at work and at home and I use a PowerBook when I am travelling and as my main storage of files for the G5's so I have the most current data wherever I am. (We are not running a server).

When working on the G5's at work or home I want to be able to have Mac Mail "see" my PowerBook data file when I am working in target disk mode, however it seesm to default to the G5 hard disk.

If you have a Mac.com account, you can use iSync to keep your e-mail up-to-date on Mac.com. You can then sync your other machines so that they all use the same e-mail data. It costs to have a .Mac account, but it's a fixed cost and handy in many other ways too.
