Mail Server Setup

I am trying to set up an email server.
But there are a few variables I am not sure how to deal with.

First, I am connected to the internet through a DSL router, which also acts as the DHCP server. I have the ports for SMTP and POP3 open and directing traffic to the IP of my server.

Second, I don't have a DNS name registered with my IP address as of yet but I do have a static IP. So I am using the external IP address of my router just as I would the DNS name.

Third, I am not acting as a DNS server myself, I am wondering if I could use the (dsl providers DNS servers). How would I set that up? And does that mean I have to call them and register an MX or IP address or something like that? Or would it be easier to set up a DNS server myself? (I appologize for any of this being incoherent, this is my first attempt at something like this)

So I have no clue on where to begin on how to set up the email server. If anyone could give me a point in the right direction that would be great.

Oh I am running OS X server 10.1.1
