Is there a way to manage the memory usage in Mac OS X?

I have loads of spare physical RAM, yet still OS X uses over 600MB of virtual memory. Is there a way to tell it to use more of the "real" RAM instead? Unused RAM is over 400MB...

How much real RAM do you have? Is your HD paging when you switch apps? Just because the VM is allocated doesn't mean it's being used. What does top say?

Do not read this sign.
If you go to where your swap files are located, I'm guessing you must know where they are if you know it's taking up so much space, you can try deleting them and restarting to see how much it creates from scratch. Maybe all that swap space was created once for something you did and then never removed.
