I know this fix may seem dumb, but as an apple newbie, I did search the web and didn't come up with this reason for mac mail being slow. It's obviously one that an advanced user wouldn't need, but if you're dealing with a less sophisticated mac user, it could happen.

The Mac OS X application "Mail 2.1" was very slow to open, and would slow the whole computer down when left open. The mail messages and mail folders were not large. Rebuild inbox did nothing. Activity Monitor showed a lot of Real Memory and Virtual Memory usage by the application.
The reason for the slowdown was that the mac user had about 100 mail viewer windows open, and they were all hidden. So the solution was to go into Window(s), Bring All To Front (something like that -- I dont' have a mac with me). Then I used the red X to close them all one by one. (I didn't know how you close multiple windows in a Mac application.)
Obviously, the first step would be to go into the Windows menu first to check if you have too many windows open or not in the first place.
