OSX or OSX Server

I want to run a home file server using a Mac Mini as the server with external drives attached.

What is the best OS to use? Mac OS X which I have or OS X Server which I would need to buy.

I will have 5 machines using the file server...Mac and PC's.

If it's 5 clients and the only use is a file server, Mac OS X non-server will do fine for your use.
 
I've also done this using Linux as the server OS and installing NetaTalk so that the Macs can talk to it with AppleTalk. NetaTalk is the open source implementation of the AppleShare framework. I would recommend using Ubuntu as the server operating system (they now have a server version of the disc that has what you need to get a server up and running without downloading additional packages, although you might need to download NetaTalk using Synaptic if it's not there).

You can install Linux on either the Mac or the PC (depending on which one you download, such as the i386 version for the PC and the PPC version for PowerPC Macs)...and the nice thing about using Linux is that it's free. :)
