Printing problems

Does anyone successfully use OSX apps for prepress. I use OS9 apps under 10 and it works fine. But Apple has made the printing stuff "so easy" that it is very difficult to make changes to printers and drivers and have virtual printers. I tell it to print to a file, and instead it still prints to the printer. I don't have options like I do in 9. What am I doing wrong?
