Printing with OSX

I recently switched from OS 9 to OS X. I have an Epson printer. When I printed in OS 9 I could select printing in Black only. In OSX I no longer have that choice. Is there a way I can print in black only.

you should be able to by changing the print settings and define black i.o color (drop down menu that shows copies & pages as default in printing window)
 
What about taking a look at the PRINT dialog box and looking at the Advanced Settings for that document, turning off color or rather using black ink is an option.
