Removing Applications

Don't Tread on Me!
How do you remove applications that were installed by the installer? I mean remove everything including help files, etc. I wish to remove Norton Personal Firewall in favor of another firewall program, but I wish to make sure that it is absolutely completely gone.

or use a third party app like spring cleaning or file buddy. they will id the files that belong to a particular app and let you trash them.

you should even be able to do this with sherlock

there is also a command-line application called pkg-remove which may be what you are looking for. Get it at http://macosx.forked.net/

Also, in /Library/Receipts/
(press apple ~ and type this in, or use the terminal), you will find copies of some of the pkg's you have installed.

Basically, if you are using pkg's, you can easily uninstall. If its some other form of installer, usually the installer can also uninstall. And, like Ed said, third-party apps can also do this, even when there is no provided uninstaller.
