Hi aj

Go to Applications > Utilities >
open Airport Admin Utility

select your base station, insert the password, and select Configure .. and you can add a password, or e.g. enable Access Control - a very nice feature to add. Access Control would enable you to allow the computers that can access your network be exactly those that you have defined before, so if you add manually the Airport MAC IDs of the computers that can join, you can be sure no one else will be in your network.

And yes, you can. Normally the network selected is the one with stronger signal. If you want to be sure e.g. of using ethernet, just select from airport menu item to turn the airport off so you will then be without any doubt using the ethernet.
