Silly question - default apps for file formats

This is the type of thing I should really know but I can't find any options in osx for. Files have default applications in osx, just as files belonged to apps in classic but is there a way to change all files of a certain format e.g. jpeg to be opened by one app e.g. preview?

While I believe there are a number of ways to set the default application, my favorite is to select a sample file of the appropriate format. Then, either control/click or select 'get info' from the finder's file menu. Select 'open with' and choose your application. Then select 'change all'.
