Simple question, can't find answer - Smart Folders

Well I've read the Help files about Smart Folders, and seached this forum for a while, but still can't find out how to add another search criteria. It gives me only two, but I need more, and I could have swore I saw Steve J. add more way back when he demo'd smart folders at some conference.

Well I don't know why I didn't see them before, but it does look like the plus symbols disappear after you click on the minus or the plus. That is odd. Why do they do that? Once that is done, is there any other way to get the additional criteria boxes back other than cancelling the whole smart folder box and starting a new one? I would think as long as there wasn't three up that there would always be a plus symbol.

Are three search criteria as many as OS X will allow in a smart folder?

Widen the window. Grab the little handle in the lower right hand corner and pull it to the right.

I suppose it was just a matter of time and I would have found that on my own. Maybe not. Thanks very much!
