Stereo Bluetooth While Docked

I recently got a docking station for my 2008 13in macbook. When I dock it, the headphones jack automatically connects to my speakers. The problem is that I often use my Stereo bluetooth headphones for editing music so not to disturb others with repetitive playing. But for some reason, it won't allow a connection to my headset while something is plugged into the headphones jack. If I go to sound preferences and select the headset in the 'output' tab and go to play music, iTunes just freezes up and requires a force quit. Any ideas what might be causing the conflict? When nothing is connected to the headphones jack, the bluetooth headset connects without problems.

Actually, its not a problem with the dock, it happens whenever any headphones are plugged into the headphones jack. It's just difficult to unplug the headphones jack while it's docked. The dock is a simple design that simply extends all the connections behind the desk.

Then you have the simple solution. If you can't use your bluetooth headset while the dock is attached, then the dock is not a practical solution for you.

If everything else about that dock is OK for your use, then you could probably remove that audio connector from the dock. You may need to cut it off with a side-cutting pliers, or a razor saw.
Or, use standard headphones when you need to edit.

So really no setting I can manipulate, like in the registry perhaps? When docked, I need my BOSE speaker system to work and honesty, I have found the bluetooth headphones that I am currently using to have the perfect balance of frequencies for editing purposes. There has to be a fix somewhere...

OS X doesn't use anything like a registry.

It's a hardware choice, here.
If you plug in headphones (or your external speakers) other hardware audio outputs (the internal speakers and other audio outputs) are bypassed by that external audio connection.
You could experiment with an app that re-directs audio. But I'm not sure if you can re-direct external output to another external output.

Even an iMic might give you other options for external audio.

Anyway - you don't listen to the Bose when you are editing, so as not to disturb others, which you already said. So, you can't use the dock while you edit. When you're not editing, plug the dock back in, and there's the Bose, eh?
One of the good reasons to have a laptop dock is less wear & tear on the external ports, as you can just leave those plugged in all the time, and I understand your frustration in this. The problem is that you have chosen a bluetooth audio output, which is bypassed by the external audio out. My suggestion is still standard headphones. Those headphones could also be USB wireless, I suppose.
