Stop iPhoto launching.

Open ~/Library/Preferences/com.apple.iPhoto.plist in textedit, scroll to the line <key>AskHotPlugAction</key>

and change the value to <true/>.
Save, launch iPhoto and click no in the "do you want to open iPhoto when a camera is plugged in?" window.

Sorted.
 
There's an easier way.

Open the app Image Capture and go to preferences. No need to have the camera connected. In the first window of preferences you can choose which program (or no program) to use when plugging in your camera.

To change your default browser, change the preference in Safari.

To change your default mail program, change the preference in Mail.

I thought that might have something to do with it but hey, I was already playing about in my preferences folder!
 
To turn off iPhoto, go to the iPhoto program preferences and set it to not open when a camera is connected…just realized I hadn't fully read your first post. :)
 
Natobasso was correct in the first post. There is nothing in iPhoto preferences for setting camera use. It's really in the Image Capture preferences, very easy!
 
Yeah, I couldn't find any options for the camera in the preferences of iPhoto.

But Image Capture solved it.
