My memory is vague, but if you Get info on an item (Apple + I), you can drag an icon to the icon in the Get Info window when selected, and it will replace it. Something like that.
Usually the icons are accompanied by a tool to use them. Check out Candybar, for example. That is a very good but simple program to use.

I ve heard about Candybar, but I would actually like to know the location of where they are kept. In the previous versions it was \system\library\core services\systemicons.bundle\contents\resources\systemicons.rsrc. They are not there anymore in this version from what I can gather....
