I am having issues displaying many of my emails. Many of my friends and my bills and such are sent to me in chinese text. sometimes simplified, sometimes traditional. For some reason, most of them appear as jumbled garbage.

i know macs can display these fonts....why do they not appear in mail?

i am having similar issues in Safari. Many websites i go to are in chinese (like online bills). if i view them in Firefox it appears fine set at western encoding. in safari, if i set to western encoding, i can not read it. instead i must switch the encoding every-time i want to read them.

why is my mac not showing these fonts?
 
Did you try going to system preferences -> international and changing to order of languages? You might want to try chinese as the main language, this might make Mail run in chinese, if it can, and hopefully display the messages in chinese.
 
but i dont want to have to switch every time i get a different email or need to view a different webpage.

its annoying to have to switch all my prefs in order to view 2 different texts while other browsers and mail programs read both....
