Okay, even though all my prefs are seemingly set to British English Dictionary, I am still getting highlighted errors for such words as organise (damn, there they are again!)... expecting it to be organize!

Why oh why oh whyz?
 
I think you need to teach it the spellings. I don't think Apple actually included any British spellings in the dictionary.

Note I've seen someone complaining that after telling the dictionary to learn a spelling, it still highlights the words as an error afterward. I'd say if that happens to you, go submit it as a bug to Apple. ;)
 
There is the option for British English (I'd be damn upset if the only option was USA English!)... it's plain to see, I've even got the little Union Jack British flag in my menu bar which indicates British (character set?).

Damn, this is winding me up!
 
Erm, I'm not at my Mac right now (pesky Work PC) but I had the same issue the other day in TextEdit and managed to change it.

I think there was an option in the spelling window thingie (either from a right click or via one of the main menu items) to use a British English dictionary (is that where you set it?)

Once I changed that it was OK and stopped whining about z's. I did NOT need to teach it each word!

Sorry to be vague. If you're still stuck I will look at my Mac when I get back to it.
 
Okay... here's what's needed to be done (bit of a nonsensical way though! Especially if you ain't Mac savvy!)

It seems that whichever application you are typing in (with Correct as I Type enabled)... you have to go to edit (or right-click), select Spelling, then select the British English language (whereas it's set to English as default)... this for every app! Mail, Safari, whatever... stoopid!
