Ok - am new to a mac environment...so please a little patience :D

Anyway a few questions.

1) I installed Leopard which was great, but the folder "fans" on the dock at the bottom fan out, but sometimes contain no text, no image, just a grey oblong where the titles should be. If I switch to grid view, they are all there. It won't appear in fan view.

2) I must have accidently removed my downloads folder in the dock. Where can I find this to put it back?

3) If i had some programs that were added to the dock at the bottom (i.e. numbers) and now the program icon is not there nor is it in the applications folder has it gone forever and needs to be reinstalled?

2) Just open /YourHardDrive/Users/YourUserName/ and drag the DownLoads folder to the right side of the Dock.

3) That no icon just means the shortcut (the Dock is just a shortcut listing) can't find the application. JUst take the Dock-no icon and drag it out of the dock and let it go, it will go poof. To Add an Icon to the dock just go to /YourHardDrive/Applications/ and drag the Application to the Dock that you want to appear in the Dock.

To fix your first question I need to now if when you did the Leopard install did you do a Fresh install or the Upgrade install.

One thing I might suggest, since you seem new to the Mac, an iTunes video podcast that is running a new Leopard install series right now call ScreenCastOnline. You will get a great how to video presentation.

A preference file has become messed up. Maybe if you delete the dock preferences (/YourHardDrive/Users/YourUserName/Library/Preferences/). The Preferences files to delete are com.apple.dock.db & com.apple.dock.plist . Once you delete these files log out and log back in. This will reset the Dock to the install state.
