Why does OS X Mail double space?

I just copied a MS Word 2004 document and pasted it into the message body of my Mail message. The font changed (I really don't care about that so much though it would be nice if it stayed the same) and everything was double spaced. I've noticed that often people that seem to send my email from OS X Mail always seem to double space everything. I now realize something is wrong.

How can I stop it from double spacing?
 
My guess is that you and your friends are hitting [return] at the end of each line. I just performed a test by copying the text from an existing Word document into Mail. Standard paragraphs copied single-spaced as expected. Carriage returns between some paragraphs resulted in extra line feeds in some cases, but not others. The sporatic extra line feed seems to be a bug in Word's clipboard handler. I have found extraneous spaces, characters copied from previous files, and whatnot in those extra "blank" lines.
