how can I change Mail.app into Eudora.app in menu' "Finder --> services --> mail --> send to"?

I don't think you can -- those are "Services" you're talking about in the Finder > Services menu, and specific applications have to be written to take advantage of them. Mail is written to take advantage of services, but I don't think Eudora is.

You may want to try changing your default mail client by launching Mail and then selecting the "General" tab of the Preferences.

...that is, of course, if you're using anything prior to 10.3. 10.3's default mail and browser preferences are located in either the mail application or the browser application. 10.2's preferences for these things are located in System Preferences > Internet, like Cheryl said...

If you want to make Eudora your default mail app, open Apple's Mail, and go to the Preferences and set there under the General Tab.
