Is there any way to see what a computer has done within the last week or so?... Someone was using one of the studio computers without permission, and I want to know what the computer did specifically while the other person was oporating it. Any information would be greatly appreciated.

There's always the "Console" (Applications > Utilities) that will let you view the log files of the computer.

As far as a list like:

Logged In...
Opened PhotoShop
Opened Finder Window to "Private Stuff"
Edited "badpicture.jpg"
SSH'ed to "dont.connect.to.me.com"
Hacked root account
Deleted home folder

...you're out of luck. Mac OS X doesn't keep a log of what each individual user did in that kind of fashion -- you'll have to check the ssh log to see if they made a secure connection, you'll have to check the OSXvnc log to see if they initiated a VNC session, you'll have to check the Disk Utility log to see if they formatted any disks, etc. -- you basically have to know what you're looking for before looking for it, if that makes any sense. There isn't a "universal" log that keeps track of what users do in human-readable format.
