iTunes not displaying properly

at the top of iTunes, its suppose to display the words artist, album etc. and if you hit them then it will sort by whatever you hit. The problem is that the words are unclear. Any ideas why that is?

By "words are unclear" I'm assuming that you mean illegible. Illegible words in standard OS X apps are usually caused by font problems. If you have a ton of fonts loaded on your system one or more could be causing a conflict with a system font (usually Helvetica, I've found) Use Font Book (if you don't have a better, 3rd party font manager) to resolve duplicates, or follow Extensis' "Best font management in OS X" white paper (go to http://extensis.com)

Ya, that addresses my problem. and illegible would have been a better word.

I'm a bit afraid of deleting a font that is still in use.

Have you deleted the font cache in the Mac yet? There are many free/shareware programs that will do that for you.
