If I click apply, will I lose data on the Macintosh HD or WINDOWS XP partition?

Be aware that if you're going to create GNU/Linux partitions to install GNU/Linux on, you're going to need at least two: one for swap and one for the root partition (aka "/"). This is also assuming you're using another bootloader other than the ones available for GNU/Linux (yaboot for PPC Macs or elilo for Intel Macs).

Ah ok... Does apple's built in bios thing (Option at boot) support 3 OSes? I've seen it display 3 when I have my external hard disk plugged in, it has leopard from an older computer on it. And is there a way I can throw another partition in there without erasing it, similar in what boot camp assistant does?

Apple's "option key at startup" will recognize only Mac OS X volumes, and Windows volumes that were installed and prepared with BootCamp.

If you want to have a Linux partition in there, too, you're better off using rEFIT:

http://refit.sourceforge.net/

If you want to add another partition, you may want to look into iPartition:

http://www.coriolis-systems.com/iPartition.php

Read those carefully, though, as sometimes adding/removing/resizing partitions borks the bootability of the Windows partition.
