Restricting applications with workgroup manager

Good Day~
I have macbooks in a school setting where I have been asked to restrict applications such as the PhotoBooth, ITunes, Messenger, Server utilities, ect.
I am learning that I can just have certain applications open by managing the ones I want in WM, however, I need access to those applications that I am restricting under my tech login. I have a student workgroup with all the laptops in that workgroup for ease of managing.
How can I login into any of those laptops with my tech account and get all the applications- not just the ones that the WM is allowing?
 
Are these Macs in a server's Open Directory or Active Directory group? What version of server and client side OS X are all the client or administrator Macs are running? Are the kids Macs logging in with roaming server accounts?

Mac's using open directory
Server OS is 10.6.5
Client OS is 10.6.4
We are using the Kanaka plugin for the users to access their folders on our Novell servers.
