Subtitles and Movies?

Hey, I got a mkv file and I try open it with Quicktime to play it. This file has subtitles and I think they're encoded into the file. So, I play it and the subtitles are very annoying. I go on and skim through the movie, and I get that fuzzy image telling me the player has to catch up to the changed position. I wait till the movie plays again, and voile! the subtitles are gone for a few minutes. But eventually they return :(. This shows the original video data is still there without the subtitles.
I now know quicktime filters out the subtitles for a short time because of the video messing up when I skin through it. But is there anything I can do to get the subtitles out permanently? Any solution will do guys, plz help.
 
Ok, ElDiablo, I checked out the link you posted and it looks like it could help me, but something about buying QuickTimePro shows up, how do I get past that?
fryke, I have VLC and tried playing the movie with it, but how do I get rid of subtitles specifically, I haven't found anything on my own yet.
