I accidentally saved a new paper over another paper that was due this week and now I am wondering if there is anyway to recover the old version? Is there any software that can do this? I have a Macbook.

Yep, the files are pretty much gone.
If you're using Leopard or Snow Leopard and Time Machine, it would be simple to restore the file from the Time Machine backup.
If you don't have Leopard or Snow Leopard, you can still restore the file from the backups that you regularly take.
