Display problems for lectures

I have a Macbook Pro and a DVI adapter for using with an LCD projector.

When I set up the system the screen does not show in its entirety. The dock and menu bar don't appear and when I open Keynote I have to push the windows over to the far right for it to show in the centre of the LCD projection (see attachment).

Not only that, but two slides (current and next) are shown together when I only want the current slide to show.

Does anyone of knowledge of what may be wrong or have similar experience of this?

Your projector is a second display, and, by default, is an extended display (extending your main screen), which is why your dock is not displayed by the projector, and you don't see all of the screen on your internal screen.
You can either change your System pref/Displays to Mirroring (select that in the Arrangement tab). You will NOT see the arrangement tab, unless you have the projector connected. Mirroring then will show exactly the same screen as your built-in screen (mirrored!)
Or, leave mirroring turned OFF, and go into Keynote preferences, and change the settings for the presenter display, or the slideshow. For example, you can change Keynote settings so you show the slideshow ONLY on the projector, and you can see the next slide on the laptop screen (giving you more control over the presentation.)
