@ home I have a mac mini and G4 laptop that I want to use CAT5 to connect thru the Airport Extreme to the internet instead of wireless.

The two computers don't need to talk to each other they just need internet and a printer connected to the Extreme USB port.

What do I need to do next?
 
You need to plug in ethernet patch cables from each Mac to the Airport Extreme base station.
And -
that should be all you need.
The Mac should see the ethernet, and connect to it without further action from you.
If the outside connection (the internet) is active and connected to the WAN port on your base station, then should work within a few seconds.
 
do I need to set-up a network? thru Airport utility or Network Preferences?

To turn off the wireless you would have to use /Applications/Utilities/Airport Utility and then click on the 'Manual Setup' button. In the 'Wireless' mini tab you can use the pull-down to turn off wireless.

If you need more ports that isn't on the Extreme then look a Gigabyte switch like this. Also get you Ethernet CAT6 cable cheaply from MonoPrice.
